Re-routing wires
I am adding on to our house and the electrical panel is in the garage (which will be part of the remodel. I need to re-rout the wiring for 8-10 circuits right after they come out of the service panel. I was planning on removing the wire from the panel and moving it to the new location and then pull an new wire from the panel to the now too short wire and connect in a junction box.

My question is, should I put a junction box for each circuit (seems like a lot of clutter and confusion) or is there a large junction box I can put in and do all connections in one box. (If so what is this box called and where do I get one)

Re: Re-routing wires
You can just get a big access panel. I think I saw something like that in HD the other day. It looks like a small empty main panel. Be sure you mark the wires well inside the box.
