Beam Cutting 
I am putting in a 6" x 12" x 18' beam to replace a load bearing wall. One end of the beam meets the slope of the rafters. How much can I cut off the corner of the beam to meet the slope of the roof and still be "legal"?

You have to have your Architect or Engineer do that for you. I had the same situation many times and there are a lot of adjustments you can make but they will have to tell you how much you can get away with. The last one I put in I had to add another 2x4 to the top plate keeping the beam at the original top plate with a cathedral ceiling so my rafters would sit up higher so that you don't have to cut as much out of the beam without loosing the structural integrity of the beam.

If you have ceiling joists there you can keep your ceiling joists on the original top plate and then put blocks in between the joists and then sit the rafters on top of the blocks..
